COURSE CONTENT

A1.P :

  1. Theory of the Shoulder (A 1 P)
  2. Opening of the shoulder in the Maza area / preservation
  3. Maza cut (Main objective: to develop a correct cut and become familiar with the technique in the Maza area)
  4. Plating Concepts (1)

 

A2.P :

  1. Theory of the Shoulder (A 2 J)
  2. Opening of the Shoulder Blade Area of the Stifle-counter Blade (Babilla-Contramaza) / Preservation
  3. Cutting the Babilla - Main Objective: Develop proper cutting technique and become familiar with the Babilla area.
  4. Plating Concepts (2)
  5. Developing the Third Cut
  6. Presentation techniques for professional and aesthetic plating.(3) Balancing portion size and visual appeal.
