- Ham Theory (A 1 J)
- Opening the ham in the Maza area / preservation for proper consumption
- Maza cut (Main objective: to develop a correct cut and become familiar with the technique in the Maza area)
- Plating Concepts (1)
A2.J :
- Ham Theory (A 2 J)
- Opening the Ham – Babilla Area / Preservation
- Cutting the Babilla - Main Objective: Develop proper cutting technique and become familiar with the Babilla area.
- Presentation techniques for professional and aesthetic plating.(2) Balancing portion size and visual appeal.
- Developing the Third Cut
- Plating Concepts (3)
